How to Read a Recipe Like a Cook

Skim it twice, prep everything first, and watch the food instead of the clock. Small habits that change your results.

We keep the writing plain on purpose. A recipe should read like a good cook talking you through it, not a wall of qualifiers. That means telling you what to look for -- the color, the smell, the sound of the pan -- instead of leaning only on times and temperatures that vary kitchen to kitchen.
