Pick a protein, a technique, and a sauce. That is the whole trick to cooking well on a Tuesday without a recipe in front of you.
We keep the writing plain on purpose. A recipe should read like a good cook talking you through it, not a wall of qualifiers. That means telling you what to look for -- the color, the smell, the sound of the pan -- instead of leaning only on times and temperatures that vary kitchen to kitchen.
