Method
How to make it
Pat the tofu dry and season well with salt, pepper, and a little of the spice mix.
Heat the neutral oil in a nonstick pan over medium-high and crisp the tofu until deeply colored.
Add the aromatics with the scallions and carrots; cook until fragrant and just tender.
Build the katsu sauce in the pan and simmer until it clings to everything.
Fold it back together, taste for salt, and finish with the fresh herbs.
Serve hot over steamed short-grain rice.
