How to make it
Pat the pork dry and season well with salt, pepper, and a little of the spice mix.
Heat the butter in a dutch oven over medium-high and crisp the pork until deeply colored.
Add the aromatics with the zucchini and cremini mushrooms; cook until fragrant and just tender.
Build the red wine sauce in the pan and simmer until it clings to everything.
Fold it back together, taste for salt, and finish with the fresh herbs.
Serve hot over buttered potatoes.
